Butter Chickpea Curry
Ingredients
- 12 OZ chickpeas
- 2 TBS canola oil
- 1 TBS butter
- 1 EA yellow onion
- 1 TSP garlic (minced)
- 2 TSP curry powder
- 2 TSP garam masala
- 1 TSP ginger (ground)
- 1 TSP cumin
- 1 TSP salt
- 1 CUP yogurt (plain greek)
- 8 OZ tomato paste
- 15 OZ crushed tomatoes
Instructions
- Warm oil and butter in skillet over medium heat.
- Stir in onion and garlic and cook until the onions are soft and translucent.
- Stir in curry powder, garam masala, ginger, cumin, and salt
- cook for 1-2 minutes, stirring
- stir in tomatoes, yogurt, and chickpeas
- Simmer 5 min
