Butter Chickpea Curry

Ingredients

  • 12 OZ chickpeas
  • 2 TBS canola oil
  • 1 TBS butter
  • 1 EA yellow onion
  • 1 TSP garlic (minced)
  • 2 TSP curry powder
  • 2 TSP garam masala
  • 1 TSP ginger (ground)
  • 1 TSP cumin
  • 1 TSP salt
  • 1 CUP yogurt (plain greek)
  • 8 OZ tomato paste
  • 15 OZ crushed tomatoes

Instructions

  1. Warm oil and butter in skillet over medium heat.
  2. Stir in onion and garlic and cook until the onions are soft and translucent.
  3. Stir in curry powder, garam masala, ginger, cumin, and salt
  4. cook for 1-2 minutes, stirring
  5. stir in tomatoes, yogurt, and chickpeas
  6. Simmer 5 min

Serves 4
